This tangy dip is packed with a garlic punch. We love the simple fresh flavors of the lemon and parsley in this recipe, but the ingredients can easily be varied for a completely different taste profile. For a little variety, swap out the parsley and lemon zest for roasted red peppers or sun dried tomatoes!
Edamame has become quite popular over the past few years, and can now easily be found fresh in your produce isle, or in the frozen foods section. We like the steam-in-bag microwaveable version for a quick and easy preparation.
Serve this dip with your favorite low-sodium crackers and veggies. This dip can also be added to a sandwich or wrap for a little extra zest.
Ingredients
- 1 cup steamed edamame (shells removed)
- 1/3 cup tahini
- 1/4 cup parsley
- 1/4 cup water
- zest of 1 lemon
- juice of 1 lemon
- 3 cloves garlic
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil
Method
Step 1
Combine all ingredients except olive oil in a food processor. Blend until smooth. Add olive oil and blend once more. Serve immediately with your favorite crackers and veggies.
