This is a low sodium version of that San Franciscan treat we grew up with and still love. The best part is, it is just as easy to make as the boxed stuff! Paired with steam veggies, this makes an easy and quick meal. This recipe is very flexible, and we encourage you to experiment with the your own favorite low-sodium seasoning blends in this rice and orzo dish.
- 1 cup uncooked orzo pasta
- 1 cup white rice
- 2 2/3 cups low-sodium chicken broth
- 2 tablespoons olive oil
- 2 tablespoons no-salt butter
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablepoon fresh parsley, minced (optional)
- 1 tablespoon fresh basil, julienned (optional)
- 1/8 teaspoon black pepper
Melt olive oil and butter in a large saucepan over medium-high heat. Add orzo and rice. Stirring constantly until orzo is browned.
Add chicken broth, garlic powder, onion powder, and black pepper. Reduce heat to slow. Bring mixture to a simmer and then cover. Cook for 20-25 minutes, or until all liquid is absorbed.
Mix in the parsley and basil (optional). Serve with your favorite steamed vegetables.
We used Pacific Natural Foods Organic Low Sodium Chicken Broth in this recipe, with only 70 mg of sodium per cup!
