Low and slow- this cooking technique concentrates the sweet flavor of the cherry tomatoes. Use this tomatoes as a side dish, tossed with pasta and basil, or in a fresh veggie salad.
These tomatoes can be frozen and used in pasta dishes at a later date (but not salads).
- 4 cups cherry tomatoes, halved
- 1 tablespoon fresh thyme, stems removed
- 3 cloves garlic, halved
- 1 teaspoon olive oil
Preheat oven to 250°F.
Line a large cookie sheet with aluminum foil. Arrange tomatoes cut-side up on the cookie sheet. Add garlic slices. Sprinkle with fresh thyme, and mist or brush with 1 teaspoon of olive oil
Roast tomatoes for two hours. Tomatoes will reduce in volume by 1/3 to 1/2. Remove from oven and use in your favorite recipes or serve a simple but delicious side dish.
We recemmend using a Misto Tritan Oval Oil Sprayer Bottle to mist the tomatoes with a light coating of olive oil. What a healthy way to add just enough olive oil to your favorite recipes!
