Melt-In-Your-Mouth Pork Shoulder

Perfect for sandwiches, this slow-roasted pork shoulder is just fantastic.  Use it in place of salty cured ham in your favorite recipes to reduce the sodium.   For a satisfying low-sodium dinner, serve with mashed potatoes and steamed veggies.  This recipes makes 30 servings (each serving is 3 ounces of cooked meat), so you are sure to have lots of leftovers.  Freeze the remaining pork for a quick and easy lunch meat!

For the best flavor and to keep the pork moist and tasty, please be sure to use a pork shoulder with the bone and skin on.

Ingredients

  • 10 pounds pork shoulder (with bone and skin left on)
  • 6-8 cloves fresh garlic, minced
  • 1 tablespoon fresh thyme, stems removed
  • 1 teaspoon black pepper
  • 1/2 cup dry white wine
  • 1 tablespoon olive oil
  • 6 cups low-sodium chicken broth, divided

Method

Step 1

Preheat oven to 450°F.

Step 2

Mix the garlic, thyme, black pepper, red pepper flakes, and olive oil together in a small bowl. Set aside.

Step 3

Place the shoulder on a roasting rack set inside a roasting pan with the skin-side up. Scarify the skin with criss-cross incisions 1/4 to 1/8 inches deep, about 1 to 1/2 inches apart.

Step 4

Rub the garlic and olive oil mixture over the roast, being sure to work the mixture into the incisions.

Step 5

Place the pork shoulder in the oven at 450°F for 40 minutes.

Step 6

Pour white wine and 4 cups of chicken broth into bottom of the roasting pan. Reduce heat to 250°F and roast for an additional 6 hours. Check the level of the liquid in the bottom of the roasting pan, adding the remaining 2 cups of chicken broth as necessary.

Step 7

Reduce the temperature of the oven to 225°F and continue to roast for another two hours.

Step 8

Remove roast from oven and allow to sit for 30 minutes before carving. Remove and discard the skin and bone.
