Low Sodium Kifta

Add this Greek favorite to your low sodium menu!  Lean ground beef or ground venison can be used in place of the lamb in this recipe if you prefer.  Serve with white rice and Greek yogurt.  Scrumptious!

Ingredients

  • 1 pound ground lamb
  • 4 cloves garlic, crushed
  • 1 small onion, grated
  • 3 tablespoons dry parsley
  • 1/2 teaspoon freshly grated ginger
  • 1 tablespoon olive oil
  • 1 tablespoon ground coriander (seed)
  • 1 teaspoon cumin
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 8 wooden skewers

Method

Step 1

Soak skewers in water until ready to use.

Step 2

Mix together all ingredients in a medium mixing bowl until well combined. Refrigerate for 30 minutes.

Step 3

Form mixture into 1 1/2 inch balls. Place three balls on each skewer. Flatten each ball slightly to form a slightly oval shape when placing them on the skewer.

Step 4

Slightly grease grill and bring to medium heat. Cook skewers for 3-4 on one side, and then flip. Cook on second side for an additional 3-4 minutes, or until cooked to desired level of doneness. Serve immediately.
