These fajitas make a healthy low sodium meal- spicy, tangy, juicy- they will really hit the spot!
Many store-bought flour tortillas are very high in sodium. However, there are a few good low sodium choices out there, so keep your eyes peeled. If you can’t find low sodium tortillas in your local grocery store, you can either make your own (a Low Sodium Gourmet recipe is coming soon) or use corn tortillas, which generally contain much less salt. Giant Food Stores brand medium-sized flour tortillas have 120 mg of sodium in each tortilla. While this is not great, many name brand tortillas have much more.
Check the nutritional facts on the chicken breast carefully. Most commercially-bought chicken is “enhanced” with a salt-water broth. The salt water is used to plump up the chicken, adding water weight and unnecessary sodium. Some brands are better than others, so please take a close look before purchasing. It has been our experience that Perdue-brand fresh boneless skinless chicken breast is lower in sodium than most at 75 mg per 4-ounce serving. Stock up when it goes on sale!

- 1 pound chicken breast, cut into strips
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1 large onion, cut into 1/4 inch rings
- 3 cloves garlic, minced
- 1 teaspoon lime zest
- juice of 1 lime
- 2 teaspoons chipotle powder
- 1 teaspoon cumin
- 2 teaspoon honey
- 1/4 teaspoon black pepper
- 1/3 cup apple cider vinegar
- 1 tablespoon olive oil
Combine garlic, lime zest, lime juice, chipotle powder, cumin, honey, black pepper, vinegar, and olive oil. Pour mixture over chicken strips. Marinate for at least 1 hour.
Heat a cast iron pan on high heat. Add chicken to pan, and saute until cooked, about 8 minutes.
Add peppers and onions to the pan. Continue to cook for another 5 minutes. Serve immediately.
