Fried Green Tomatoes with Garlic Aioli

What a great summer treat!  Easy and fun, these fried green tomatoes have a crispy crushed pretzel crust and are served with a garlic aioli dipping sauce.  They are fried in a mixture of olive oil and vegetable oil.

Ingredients

  • 4 medium green tomatoes, sliced 1/4 inch thick
  • 1 cup finely crushed no-salt pretzels
  • 1 cup flour
  • 2 eggs
  • 1 teaspoon and 1/8 teaspoon garlic powder, divided
  • 1 teaspoon and 1/4 teaspoon black pepper, divided
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup olive oil
  • 1 cup vegetable oil
  • 1/4 cup light mayonnaise
  • 1/4 light sour cream
  • 2 cloves garlic, crushed
  • 1 teaspoon lemon juice

Method

Step 1

To make the garlic aioli, whisk together the mayonnaise, sour cream, and lemon juice in a small bowl. Add 1/8 teaspoon garlic powder, 1/4 teaspoon black pepper, garlic, and lemon juice and mix thoroughly.

Step 2

Combine the olive oil and vegetable oil in a deep frying pan. Allow the oil to warm up to frying temperature at medium-high heat. Check the pan often to make the olive oil doesn't burn. Adjust the heat level accordingly.

Step 3

In a shallow bowl, mix together the flour, 1 teaspoon garlic powder, 1 teaspoon black pepper, onion powder, and cayenne pepper. Place the beaten eggs in a another shallow bowl, and the crushed pretzels into a final shallow bowl.

Step 4

Dip each slice of tomato into the eggs, then the flower, back into the eggs, and then into the crushed pretzels. Fry tomatoes on each side until golden brown, about 2-3 minutes. Place tomatoes on a plate covered with paper towels to drain. Serve immediately.
