Crunchy Jicama-Orange Slaw

Crunchy jicama, cabbage, carrots, and sunflower seeds with a tasty orange-vinegar dressing.  Simple and delicious.  If you don’t have access to jicama, apples are a great substitute.

Ingredients

  • 2 cups cabbage, finely shredded
  • 1/2 cup jicama, julliened
  • 1/2 cup grated carrot
  • 1 medium yellow onion, sliced thinly
  • 3 tablespoons roasted no-salt sunflower seeds
  • 1/4 cup organge juice
  • 1/4 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon celery seed
  • 1/8 teaspoon paprika
  • 1 pinch black pepper

Method

Step 1

In a medium-sized mixing bowl, combine orange juice, apple cider vinegar, and spices. Whisk in vegetable oil.

Step 2

Add cabbage, jicama, carrot, onions, and sunflower seeds. Stir to coat.
