This is a great soy sauce substitute that is packed with flavor! There are only 8.5 mg of sodium in a 1-tablespoon serving. Use this sauce in any Asian-inspired recipe that calls for soy sauce.
If you do not wish to discard the shiitake mushrooms called for in this recipe, save them to add to a stir fry our soup. This sauce will keep for up to 6 weeks in the refrigerator.
- 1 cup balsamic vinegar
- 1/2 cup rice wine vinegar
- 2 large cloves garlic, halved
- 1 1-inch piece of fresh ginger, cut into 4 pieces
- 1 cup dried shiitake mushrooms
- 1 teaspoon sesame oil
- 1 tablespoon unsalted butter
Put all ingredients except butter into a small saucepan bring to a simmer over medium heat, stirring constantly. Allow mixture to simmer until liquid has been reduced to one third of its original volume, approximately 1/2 cup (this should take 5-10 minutes).
Strain the mixture to remove the garlic, ginger, and mushrooms and discard. Return the liquid to the saucepan and reduce heat to low. Add butter and stir until melted.
Allow the mixture to cool. Refrigerate at least 3 hours before using in your favorite recipes.
