Our favorite, most-trusted, most-used bread recipe. This break is perfect for sandwiches and morning toast. It comes out perfect every time.
We do not recommend halving this recipe, as it can be difficult to mix well in a stand mixer without enough dough. If you are worried about not being able to use all of the bread before it goes stale, you may freeze one loaf to save it for later. To freeze, wrap tightly in tin foil and place in a large freezer bag.
- 3 cups lukewarm water
- 2 tablespoons sugar
- 4 1/2 teaspoons yeast (2 packages)
- 2 1/2 tablespoons vegetable oil
- 2 cups wheat flour
- 6 1/2 to 7 1/2 cups all-purpose white flour
- 2 teaspoons olive oil
In a large mixing bowl, combine water, sugar, and yeast. Whisk together until yeast is dissolved. Stir in vegetable oil.
Using a stand mixer, mix in two cups of wheat flour on low power. Add white flour to mixture in 1/2 to 1 cup increments until dough is smooth and no longer sticky.
Lightly grease a large bowl with olive oil. Place the dough in the bowl and turn to coat. Cover the bowl with a moist towel and place in a warm place until dough is doubled in size, about 45 minutes.
Punch down the dough and allow it to rise until doubled in size again, about 35 minutes.
Remove dough from bowl and form into two equal-sized loaves. Place loaves into two loaf pans, coated with a light layer of olive oil. Preheat oven to 350°F.
Cover the loaves with a moist towel and allow them to rise once more, until not quite doubled in size, about 30 minutes.
Bake at 350°F for 35 minutes, or until bread is golden brown. Remove from loaf pans and allow to cool on a baking rack.
We used our KitchenAid mixer with the dough hook attachment to knead the dough in this recipe. We love our KitchenAid mixer, it makes low-sodium living a snap!
Faberware nonstick loaf pans are great for this recipe. They make beautiful loaves of bread every time!
